All about drying fruits and vegetables. Demonstration – 6:00 – 8:00 pm
$15 per person
Participate in a demonstration and discussion about drying produce successfully. View and taste samples of a variety of products. Session also includes a discussion about what to do with the dried products beside eating them!
Quick Pack Pickles – 12:30 – 3:30 pm
$30 per person
Learn how to make pickles or pickled products using a quick pack and refrigeration method rather than fermenting for days. Understand the needed ingredients and how the quick fermentation occurs. You will make one or two quick pack pickled product such as pickled beans, peppers, or fruits.
Advanced Pickling & Introduction to Relishes – 5:30 – 9 pm
$30 per person
Relishes add a lot of flavor to a side dish, make a great addition to a burger, or are delicious spooned over fish. Learn about relishes and various ingredients used in them. Participants will make a corn relish, fruit relish, and maybe marinated mushrooms if time allows.
Advanced Tomatoes and Salsas – 12:30 – 3:30 pm
$35 per person
Canned tomatoes are so versatile! Salsas and sauces galore! But there are safety measures to keep in mind when putting up those red devils, especially when combining with other ingredients. Come learn how to safely make salsas and a variety of relishes. Participants will get practice making both.
Apples – 5:30 – 9:00 pm
$30 per person
Apples are a nice fall fruit and are another local product that can be transformed into a variety of tasty things. Learn about which varieties are better for some things than for others. Once you’ve tasted handmade applesauce, you’ll never go back to store bought! Participants will make spiced apple rings, applesauce in chunky or smooth style and perhaps apple pie filling if time allows.
Bread and Jam Camp – 12:30 – 3:30 pm
$30 per team
A parent/child class to learn how to make bread and freezer jam. Parent and child will each make a loaf of bread in a bag ready to go home to bake. While the bread is rising, each team will make a batch of freezer jam using local berries. (Any adult/child pair is wonderful! Minimum age for the kiddo is 8, please)
Canning Basics Demonstration – 6 – 7:30 pm
$15 per person
Want to get started canning but don’t know where to start? Learn about the different methods of preserving foods and which foods use which method. See the equipment needed to preserve safely and learn the basics of how to get started. Go home with resources that will help you find safe procedures and recipes for your summer canning. Watch a demonstration pickling asparagus and receive a jar to take home.
Canning Fruits – 12:30 – 3:30 pm
$35 per person
Fruits are lovely when fresh, but a jar of preserved fruit can be lovely in February! Learn the basics of canning fruit as well as turning them into pie fillings. Participants will preserve a seasonal fruit – possibly apricots if the weather cooperates! We will also learn to make brandied fruit for those special occasion.
Fruits Sauces and Syrups
$25 per person
Sauces and syrups can easily be made with frozen fruits. Learn how to get extra juice from the fruits. Participants will make an Asian plum sauce and a berry syrup. Think ahead for holiday gifts!
The Art of Making Jams and Jellies – 5:30 – 9:00 pm
$30 per person
Ever had a jam end up being a syrup instead? Come learn the tricks to making jellied products that set up. Learn about jellies, jams, sugar free jams and freezer jams. You will get a chance to make a low sugar jam using Pamona’s pectin, then a “boozy” jam like berry ale jam and/or strawberry rhubarb jam.
Canning Tomatoes – 12:30 – 3:30 pm
$35 per person
Tomatoes are great to eat fresh, and they preserve well to be used later in soups, sauces, casseroles and more. Preserving tomatoes is easy, but also can be unsafe if not done correctly. Learn about the specifics of canning tomatoes safely and fun things to do with them. Participants will preserve tomatoes that can be used many ways after opening. As a bonus, learn what to do with the tomato skins rather than tossing them in a compost pile or down the drain!
All about Berries Demonstration – 6:00 – 7:30 pm
$15 per person
Get ready for berry season! Learn how to select berries in the field or at markets. Participate in discussions on how to freeze, preserve and dry safely. Discussions will include making traditional and low-to-no sugar jams and jellies, dried berries and berry powders. Learn how to make fruit leather, always a popular treat! Taste samples of these varieties of preserved berries in class.
My Garden Went Crazy!
$25 per person
Is your garden producing way more than you can eat or preserve right now? Overabundance of zucchini that your neighbors don’t want? Learn what to do with the extra until you have time to turn it into something creative when it’s raining outside. Also learn about creative things to do with your extra zucchini.
